DOWN HOME CARE GOOD CHILI

3 cloves garlic, minced
1 Tab. Olive oil
1 28 oz can diced tomatoes
6 oz water
1 6 oz can tomato paste
1 Tab. Chili powder
1 Tab. Dijon-style mustard
1 tsp. Dried basil, crushed
1 tsp. Dried oregano, crushed
½ tsp. Ground cumin
1 15 oz can red kidney beans, drained
1 15 oz can pinto beans, drained
1 15 oz can garbanzo beans, drained
8 oz firm tofu, frozen, thawed and drained, then crumbled
1 cup chopped carrots
1 cup frozen kernal corn
¾ grated parmesan cheese
In large pot cook garlic in hot olive oil for 30 seconds. Stir in the rest of the ingredients, except the parmesan cheese. Simmer 20-30 minutes. Top with parmesan cheese just before serving. Garnish with green chili peppers, chopped scallions or hot pepper if desired. This recipe also works well in crock pot. Put in all ingredients, except grated cheese and cook on low all day.
This recipe is delicious---you will never know that there is not meat in it!!!!
